The 31-year-old chef organised the wedding day in just three weeks while his primary school teacher fiance stayed with her parents last December.
Speaking on Monday’s show, Jamie revealed that he was inspired to base their big day on the Plenty of Fish dating site after the couple found love online, the Irish Mirror reports.
Jamie said: “In the early days I didn’t tell people we met online because I was a bit embarrassed about it.
“There was no profile picture so it was definitely her character and sense of humour that took me.”
The dad-of-two, who had a €10,000 budget for the wedding, splashed out €1,450 on a traditional white dress for his blushing bride, only to dye it blue with the help of a local dress designer.
Jamie continued with his off-the-wall planning by arranging for the bride to row across a lake to her wedding in a park rather than walking down the church aisle.
And if an outdoors ceremony wasn’t enough for Nikki, Jamie ditched the idea of a classy hotel reception for a festival themed party in a glamping park.
Jamie said: “I want to do go festivals all the time but she never goes because she won’t camp, she won’t stay in a tent. There are parts of the festival theme that will make her quite uncomfortable.
“It’ll be interesting to see her reaction.”
